Chocolate Dipped Rice Krispie Treats Lollipops

Because they are such a part of Americana it may come as a surprise to my US readers that until this week I had never made Rice Krispie treats. Of course being me I could not leave well enough alone and had to put my own spin on them. I figured lollipops would make a fun party food  and then thought I would just guild the lily by dipping them in chocolate.

As I had never made these before I went straight to the source or the recipe. Ricekrispies Treat Recipe
Rice Krispie Treats
  • 3 tablespoons butter or margarine
  • 1 package (10 oz., about 40) regular marshmallows
  • - OR -
  • 4 cups miniature marshmallows
  • 6 cups Kellogg's® Rice Krispies® cereal
  • In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.
    Add KELLOGG'S RICE KRISPIES cereal. Stir until well coated.
In forming these I found wearing latex cloves and spraying them with release spray to prevent sticking. You have to work quite quickly so the mixture does not set. The size of the ball and yield is up to you but I would not recommend making them much bigger than one bite. Form the balls first and then place them on the sticks and you can then squeeze the balls on to the sticks as it should still be quite tacky.
Of course dipping them in chocolate is optional but is certainly fun. I would recommend only dipping them half way so you can see the Rice Krispies.
